Easy Chicken Taco Stuffed Peppers Recipe

Easy chicken taco stuffed peppers are full of veggies and protein. Taco seasoned chicken stuffed in bell peppers, topped with cheese, baked, then topped with traditional taco toppings.


  • 2 large bell peppers any color
  • 1 tbsp. olive oil
  • 1 pound boneless skinless chicken breast, chopped into small bite size pieces
  • 4 tbsp. taco seasoning
  • ¼ - ½ cup water
  • 1/2 cup shredded cheddar cheese
  • Optional toppings: taco sauce diced tomatoes, sliced green onions


  1. Preheat oven to 400 degrees F.
  2. Cut the peppers in half, through the stem, and remove the seeds. Place them cut side up on a baking sheet. Roast for 20 minutes.
