Greek Tofu Scramble

Start your day off right with this hearty and wholesome vegan Greek Tofu Scramble made with seasoned tofu, olives, spinach, and fresh tomatoes.


  • 8 ounces firm tofu
  • 2 tbsp nutritional yeast
  • 1 tsp tahini paste
  • juice of 1/2 lemon
  • 1/4 tsp salt
  • 1 tbsp oil
  • 1/4 small red onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup red bell pepper, diced
  • 1/4 cup Kalamata olives, pitted and halved
  • 1 handful fresh spinach
  • 1/4 cup fresh basil, chopped
  • 1/2 cup cherry tomatoes, halved
  • salt and pepper, to taste


  1. In a small bowl crumble tofu to the texture of scrambled eggs. Add nutritional yeast, tahini, lemon juice, and salt and set aside.
  2. In a large skillet heat oil over medium heat. Add onions and sauté for 5 minutes, stirring occasionally. Add bell pepper and garlic and sauté for another 5 minutes until the bell pepper is tender.
